Baked Halibut

Ingredients:

4 halibut fillets (about 4 to 6 oz each)
1 tsp. olive oil
1 onion, chopped
2 cloves minced garlic
2 cups diced canned tomatoes drained
Pepper to taste

Instructions:

Preheat the oven to 360F. Heat the olive oil in a large skillet over medium heat. Add the onions and cook, about 5-8 minutes or until onions are tender. Add the garlic and cook for 2 minutes more. Add the tomatoes, season with pepper and cook for 5 more minutes.

Season the halibut fillets with pepper and place them in a baking dish. Pour the sauce over the fish and bake until the fish is just cooked through, about 12 to 15 minutes, until fish is flaky.
Serve with salad and steamed asparagus.
