Ingredients:
olive oil
3 small whole wheat pitas
1/2 bag fresh spinach steamed
3 tbsp. crumbled feta
3 tbsp. + 2 tbsp Parmesan cheese
4 tbsp. low fat cheddar
Instructions:
Brush pita lightly with the olive oil, and cut into nacho size pieces. Steam spinach. Combine warm, steamed spinach and cheeses. With a spoon put the spinach mixture on top of pita chips. Bake in the oven at 375F until cheese has melted and pita is starting to crisp. Save the 2 tbsp. of parmesan cheese until the pita is done and sprinkle it on right before you eat. You’ll have to share this snack, it’s too good to eat alone.
