Daytime Bruschetta Snack

Ingredients:

1 tsp. olive oil
1 diced tomato
2 garlic cloves
dash of Kosher salt
basil (dried or fresh)
1 oz. feta cheese crumbled

Instructions:

Preheat oven at 360F. Place cloves of garlic in an ovenproof dish and drizzle with 1/2 tsp. olive oil. Place the dish, uncovered in the oven for about 15 minutes until garlic is golden brown and soft. Remove from oven and let cool. Squeeze cloves to remove the garlic inside. Throw the skins away and mash the garlic, add salt and pepper to taste to make paste. Set aside.

Cut the tomato into small pieces and put them in a bowl with remainder of olive oil and feta cheese. Spread garlic mixture on one side of the pita.

Distribute tomato mixture evenly on pita. Put pita in oven at 360F for 10-15 minutes or until pita is crisp.
