Ingredients:
1 tsp. olive oil
1 onion diced
2 tsp. of curry
1 tbsp minced ginger
1 tsp. chili paste
1-2 8oz cans crushed tomatoes
1 tbsp. tomato paste
Whole-wheat spaghetti cooked al dente
1 cup chicken broth
Instructions:
Sauté for 3 to 4 minutes over medium-high heat onion, garlic, curry and ginger in olive oil. Add chili paste, tomatoes, tomato paste and broth. Simmer for 20 minutes. Serve 4 to 5 tablespoons over whole wheat spaghetti. Pour on the hot sauce if you wish and serve with small tossed salad.
