Ingredients:
1 tsp. Olive oil
1/2 cup sliced mushrooms
1 tbsp. Chopped green onion
1/4 tsp. Garlic powder
2 eggs + 2 egg whites
1 tbsp shredded low fat cheese
Instructions:
Combine eggs, salt and pepper, and garlic. In a non-stick pan heat and add olive oil. Saute onions and mushrooms until tender. Add eggs. When eggs are cooked top with cheese. Serve with fresh fruit.
